Banana Almond Pancakes

Banana Almond Pancakes

Ingridients

Robusta (Ripe n cut into pieces) - 2

Sugar 6 tb sp (Powdered)

Badam - A handful (Powdered with skin)

Eggs - 2 (Separated)

Milk - 1 1/2 cup

Maida - 1 1/4 cup

Baking powder - 1 tsp

Salt - a pinch

How to make :

Butter - to fry pancakes

Powder the sugar and almonds separately. Grind banana until smooth. Separate egg white and yolk.
Sift maida with baking powder and salt.

In a large bowl add powdered sugar and banana purie and mix. Add egg yolks and mix well with a wooden spoon.

Add half of the milk and stir. Add sifted maida spoon by spoon and mix without lumps. Then add powdered almond.

Add half portion of the rest of the milk and mix well. {Check the consistency, we need dosa type batter}
If its too thick, add rest of the milk.

In a separate bowl, beat egg white with a beater until soft peak forms. Later, fold this with the batter very carefully.

Do not give pressure while folding. ((This helps to get the pancakes ultrasoft))

Keep a tawa on stove. Add a table spoon of unsalted butter. Keep the flame in sim. When the butter melts, pour a ladlefull of batter.

Do not try to give any shape, it forms a shape by itself! After 2-3 minutes, hole comes
like dosa, then turn the other side and cook until done.

Do not burn it, we need a light bown colour.. Enjoy having
it with honey or chocolate sauce!
